I started with going to organic foods, but that soon bleeds out meat -- It just grosses you out after a while. Try to make things as close to the meals you made before, just not using meat. For example, I love broccoli and cheese fajitas....sometimes some mushrooms if you like them. Very good. Also, any stir fries are excellent without meat. Portabella mushroom burgers are good if you make them right. Just try and make sure what you're eating you actually like and it's not for a "diet" because then you can actually stick to it. Go to your local book store and pick up a couple vegetarian cookbooks. Skim through them before you buy them to see if the meals sound appetizing to you.

Try different morning star products or go to perhaps a whole foods. They make great soy products (chicken nuggets, steak strips, chicken strips, ground meat) and they taste just like meat... well they do to me and to my non-vegetarian friends. Veggie and rice dishes can be extremely tasty. They also leave you feeling really good afterwards. The best kind are when you add as many different vegetables as you can find, as well as some beans/lentils or legumes and you can also add egg or onion/garlic, teriyaki or other spices to it for flavor.
One of my favorite frozen vegetarian/vegan foods is Amy's ricebowls in the organic/veg section of the supermarkets. They are frozen but you can microwave them and add extra veggies to the dish. They taste really good.
Also, you can eat salads with any kinds of dressing. You don't have to worry as much about low fat things because vegetarians need healthy fats. So you can have thousand island dressing and not worry about it. Try adding walnuts or almonds to your salads too.
Another snack idea is flax bread with olive oil and garlic/pepper spices added in. It tastes good and the olive oil with spice replaces garlic butter.
I became a vegetarian about 6 months ago. I lost 25 pounds without even trying and feel healthier than ever. You are on the right track if you want to lose weight and be healthy.

i'd suggest the book veganomicon. it's all vegan, but you can use other things to make it not so incredibly vegan if you really wanted to. but it is my favourite cookbook.
i love being a vegetarian! don't look at it as a diet, because it's not. it's a way of life, a mindset, and it will be so much easier to stick with. as for making it appetizing, spices spices spices. they add so much flavor to normally bland food. you can make all sorts of bean dips to dip your veggies in, all sorts of salads, you can eat fruit, etc etc. in your produce section at the grocery store, they make soy cheeses you can put on top of your dishes, as well as adding nuts to them too. the other suggestions are great also, make your regular dishes, just without meat. maybe try tofu. tofu absorbs the flavor around it as it's being cooked, but you also may have to develop a taste for that.
