Starting a low fat Vegetarian diet/ lifestyle?

Hellow, im starting a low fat vegetarian diet and was wondering what types of foods i could eat that wouldnt tear at my budget. I'm a college student so I need food ideas that wouldn't cost too much.



p.s. could i get away with eating just cereals, green vegetables, and some beans?Starting a low fat Vegetarian diet/ lifestyle?
Are you currently vegetarian? If so, then just cut out high fat foods - like cheese pizza, taco bell, etc.



If you aren't, then make the switch and be smart about what you eat.



As long as you are eating a balanced diet, it's not that hard to eat low-fat - especially when you are on a budget.



Rice, frozen veggies, some marinated Tofu, and Teriyaki sauce is lowfat and cheap.



Pasta with marinara sauce and some veggie crumbles tossed in, too.



Bean Burritos with sauteed veggies and rice. Cheap, easy, tasty.



Cereal is super high carb - yes, it's lowfat, but not exactly great for a diet.



Green Veggies - nice and healthy, but not a rounded diet.



Beans - great for protein and some nutrients, but again, not balanced.

tofu is a good food to eat, and tastes great if you cook it properly. make sure you also eat a lot of fruit, and have a lot of vitamin c in your diet. I don't think she means 'cereals' as in breakfast cereal, I think she means grains... and yes, grains are a very important part of a vegetarian diet, but particularly if you're trying to lose weight (1) make sure to eat whole grains: brown rice, oatmeal, whole wheat bread, quinoa, millet, spelt, bulgar wheat (like what's in tabouleh) and (2) don't rely on them too much to fill you up.



Try to fill up mostly on fruits and vegetables - they're high fiber, so if you eat them slowly, they can actually be quite filling. Try to eat at least one raw fruit or veggie every day (such as an apple, or some carrot sticks). Also, even though you're trying to lose weight, don't neglect fat altogether. The fat from nuts and seeds is actually quite good for you, and a little of this in your diet will fill you up and also help you lose weight - I promise. (Minimize the fat you get from dairy - that has a lot of saturated fat which is not good for a diet.)



Beans are great, just make sure you try lots of different kinds to keep it interesting! As for your budget, it's much cheaper to get dry beans than canned (although canned isn't all that expensive, anyway). Also, if you're worried about the $$ spent on tons of fresh veggies, you should look into good-quality frozen vegetables, which can be wonderful for cooking and often preserve lots of the nutrients.



Tofu and morningstar products and all that stuff is good, but not only is it very expensive, the bulk of your protein should really come from beans, nuts %26amp; seeds, and whole grains, anyway. If you eat eggs, those can be a very good, inexpensive souce of protein and minerals as well - just try not to have more than 4-6 a week.
