I was a vegan for about five months a couple years ago - and I think the hardest part for me was to keep variety in my diet (making sure I was getting a good mix of really healthy veggies).

black Beans and rice(when cooking beans, add pepper,sea salt(healthier than table salt), seasoning salt and garlic powder.
Fresh raw fruits and veggies.
Have you tried stuffed peppers? cut the top of put in garlic, onions, rice,
cherry tomatoes put pepper lid back on heat in oven for ten to 20 mins bon appetite!!

also, buy some mock meat and prepare the vegetables or side dish as you would usually do. mock meats are quicker to cook than normal meat (:
