I started a vegetarian diet and I need some ideas to put some pep in my meal plan?

Does any vegetarians outhere have any cookbooks they use with any good recipes or know of any good dishes I could try to make. ThanksI started a vegetarian diet and I need some ideas to put some pep in my meal plan?

Amount Measure Ingredient -- Preparation Method

12 Uncooked lasagna noodles

1/2 c Dry sherry or unsweetened

Apple juice

1 Medium onion, finely chopped

8 oz Sliced fresh mushrooms

2 Large zucchini, coarsely

Grated (about 4 cups)

2 Medium red or green bell

Peppers, seeded %26amp; chopped

2 c Fresh spinach

1 t Dried basil leaves

1/2 ts Dried oregano leaves

15 oz Light ricotta cheese

1 c Nonfat cottage cheese

1/4 c Grated Parmesan cheese

1 (8 oz) can tomato sauce

4 oz (1 cup) shredded low

Moisture part-skim

Mozzarella cheese



Heat oven to 425F. Spray 13 x 9" (3 quart) baking dish with nonstick

cooking spray. Cook lasagna noodles to desired doneness as directed on

package. Drain; keep warm.

Meanwhile, bring sherry to a boil in large nonstick skillet or Dutch oven

over medium-high heat. Add onion; cook 3 minutes, stirring frequently.

Add mushrooms, zucchini and bell peppers; cook 5 minutes, stirring

occasionally. Add spinach, basil and oregano; cook 2 minutes. Remove

from heat; drain well.

In medium bowl, combine ricotta cheese, cottage cheese and Parmesan

cheese; mix until well blended. Place 3 cooked lasagna noodles in bottom

of spray-coated dish. Top with 1/3 of ricotta mixture and 1/3 of

begetable mixture. Repeat layering 2 more times. Top with remaining 3

lasagna noodles, tomato sauce, and mozzarella cheese. Cover dish tightly

with spray-coated foil.

Bake at 425F for 25-30 minutes or until bubbly around edges. Remove foil;

bake an additional 5 minutes or until top is light golden brown. Let

stand 5 minutes before serving.
to tell you a TRUE vegetarian does not eat meat, milk, cheese, eggs, or yogert. some good foods are vegetarian lasanga and a vegetarian burger. scallop potatoes (there is no scallops in the recicipe.)I started a vegetarian diet and I need some ideas to put some pep in my meal plan?
Morning star makes Broccoli and cheese veggie bites and they are good.
First of all, a vegetarian only abstains from meat, a vegan abstains from all animal based products. Second, I find that ethnic cuisine is one of the best ways to get great meals that don't involve meat. Indian %26amp; Mexican are good examples. They have a ton of ways of spicing up those plain ol' rice %26amp; beans that they have every day so that it's different each time. Stir fry is another good way to go. Also, explore vegetables. That's the only way you'll make it. If you get stuck in the rut of just eating rice, beans, potatoes, starches, etc. and don't explore the TONS of good (not to mention tasty) vegetables %26amp; fruits that are out there then you'll end up reverting back to meat if for no other reason than variety!
spicy zucchini

In a frying pan heat 1 tbsp of oil, then add 1tbsp of Fennel seed and 1 tbsp of coriander seeds --heat until sizzles 30 sec, then in single layer add 2 zucchini cut into rounds cook for 6-8 min until lightly brown

SOOO yummy



Bean and mint salad

2 cups of both green beans AND peas

8 scallions trimmed and sliced

1 large bunch of mint

3tbsp olive oil

grated zest and juice of one lemon

salt and pepper

Crumble feta (optional)



Boil water then add beans and peas cook 3 min, remove and cool under cold water,

Put scallion and mint in a bowl and peas and beans then sprinkle with olive oil, lemon zest, and juice , salt , pepper, add feta toss well.



Braised fennel

2 fennel bulbs trimmed and cut in half

2tbsp Olive oil

1/3 cup for Parmesan cheese



boil fennel in water for 6-8 min then in shallow baking pan place fennel, sprinkle Olive oil and cheese cook at 375 for 8 min or until cheese in melted ( the longer you boil the fennel the mellower the taste)



Spicy butternut squash



1 butter nut squash halved and seeded



in a bowl add 2 tbsp of fennel seed 1 tbsp of coriander seeds, 1 clove of minced garlic and 2 tbsp of Olive oil add squash ensure well coated bake in oven for 15-20 min at 400 until tender when peicered with a fork



Ginger Asparagus

asparagus

1 tbsp of minced ginger

1 tbsp of soy sauce

1tbsp pf seasame seeds



stir fry asparagus with ginger for 4-5 min then add soy sauce and add 1 tbsp of water cook for 3 min add seasame seeds stir well and done



Eggplant steaks



2 eggplants sliced diagonally 1inc

1/4 cup of olive oil

grated zest of one lemon

2 tbsp of thymes leaves

grounded pepper

put the eggplant, oil, lemon zest, and thyme in bowl. Toss to coat add black pepper to taste. Cook on preheated grill for about 5 min on each side until lightly barred and very soft. Great with a feta salad.



the best basil pesto

2cups of loose basil

2 tbsp pine nuts

2 garlic cloves

2 tbsp oilve oil

2/3 cup of parmesan cheese

a dash of red pepper flakes



put it all in a food processor and blend

so yummy, i add so frozen peas sometime to give it a more smoother consistence





the best and my fav cookbook is EASY VEGETARIAN, And congrats becoming a vegetarian
Try also using 'meat' recipes but substituting animal flesh with a meat substitute. Lasagna with Morningstar Crumbles are great. Pasta with fresh vegetable, olive oil, and Morningstar Chicken thingies are excellent. I also use the Quorn chicken cubes to stir fry - some frozen stir fry vegetables (Trader Joe's are the best), some Sweet %26amp; Sour sauce, and the mock-chicken. Serve over rice or noodles.

there are a lot of great things you can do - i like grilled veggies or veggie shishkabobs



for grilled veggis slide in long verticle slices for shishkabobs cut in chunks and put on skewers



i like to use the following veggies %26amp; i marinate them in the same seasonings i would use on steak the lowrys marinades or the emeril dry seasonings are great



Zuccini

yellow squash

carrots

baby potatoes or red potatoes

broccoli

cauliflower

corn (i get a cob and cut it in 1-2 inch wide pieces)

snow peas
Tabasco sauce.
I love the Vegetarian Times cookbook. I am not a vegetarian and I even love it! I bought the book in order to cook for my sister's family and ended up using it myself it was so tasty.
I went to the library and checked

out a few books on vegetarian cooking

this helped me get the recipes I would

use and could write them out for future

reference. There are some great magazines

you can review and than check out the

enternet for any recipe anytime.

I live in England and in ASDA (which is Walmart to you) they sell reasonably priced vegetarian cookbooks, I've bought some great ones from there.
