Education is key. Educate yourself. There are a lot of good vegetarian websites in which to refer and lots of good books detailing suggested nutritional intake for vegetarians.
Obviously, you are aware that the nutritional needs of each type of person you mentioned are different. Doctors and mainstream nutritionists rely on the government-created USDA food pyramid which is, of course, put together by food industry lobbyists and really not at all of what the American (or any other) diet should consist.
There are many different types of vegetarianism. Lacto-veg is a diet which includes dairy products but no eggs, Ovo-veg includes eggs but no dairy, lacto-ovo includes both dairy and eggs.
Pescatarians eat fish but no other flesh meats. Then there is the flexitarian who is mainly a vegetarian but may eat meat on occasion.
The main vitamin concerns for vegetarians/vegans are the B vitamins and proteins and, in women, iron.
Follow the vegan food pyramid which emphasizes fruit, vegetables and whole grains. There is sucha wide variety of foods available to satisfy any vegetarian palate. Cooking at home ensures a healthier diet since you can control what goes into your meals.
Eat lots of small meals/snacks to maintain a steady energy level throughout the day, drink plenty of water.
