What are some really simple meals for a vegetarian/vegan diet?

I am only 12, and have switched to a vegetarian diet, and am trying to avoid dairy whenever possible.

What are some simple dinner meals, that I could possibly help make?

My parents aren't the worlds best cooks, so that's why I'm asking for SIMPLE.

Chili is a great choice. I have made many of the vegetable chili recipe on this site and most meat eaters can not tell the difference. And many of the recipes are simple.

If someone needs to have meat in it just pull some out for you and they can then add meat to the rest.



I like to double the recipes and freeze the leftovers in a portion size. You then have several future dinners

Dahl, nothing simpler or tastier.

Put a some red lentils onto boil, when they the water seems to have boiled down and mostly evaporated, mix in some curry paste. My favorite is Patak's Curry Paste. Also, you can throw in some spinach leaves to add some veggies. If you like, have them cook some rice and mix that in to. If you want to add even more flavor to the dahl, get a jar of mango chutney, I know it sounds wierd, but it's the best flavor in the world. Your parents can add some greek yogurt to their dahl for some animal protein.

Congrats on going veg! I went veg at 16 and was in the same situation, so I learned by trial and error!



Simple meals:



-Veggie sandwich, use whole wheat bread, avocado and a variety of fresh veggies for a healthy lunch. Try tofurky and mock vegan meats if you have health food store near by or trader joes type of store near by they will have. You can pair this with a vegan premade soup for a dinner meal.



-Veggie wraps made with pita bread, hummus and either fresh raw veggies or sauteed veggies are so good and easy to make.



-Pasta and marinara sauce with a side salad, not that simple at first but once you get the hang of it, its a breeze!



You should order the PETA vegetarian starter guide if you haven't already, that helped me find out so much about vegan food, its free.
I am eleven and switched to a vegetarian diet about 3 months ago, although I was part vegetarian for 3 years (I only ate white meat, not red) You could fry up some tofu which is pretty simple to do and add it to stir-frys, have it alone or boil up some noodles and have that with the tofu. Spaghetti is always a good option :] If you are cooking on your own though, not doubting your cooking skills, you could just make the noodles, add butter and some cheese. Also, buy some MorningStar or Boca meat. Whenever your parents are making a meal, they can easily substitute their meat with yours. This may bring you in the kitchen a little more though, as it did for me.
Vegetarian food is good for health. Fresh fruits, herbs, pulses, beans, and vegetables contain exceptionally god amounts of beta carotene, folates, minerals. Also vegetarian foods are rich in vitamin C, contain natural proteins and small amount of fat and minimum or no cholesterol. They are also rich in dietary fiber which helps combat cancers, constipation etc..

This is a extremely scrummy Vegetarian dish that I love.

Try Cooking it yourself. Don't leave your meals up to your parents.
A pineapple sandwich. I know it sounds weird but it's great. You grill the pineapple and serve it on a toasted bun, topped with Hawaiian salsa (recipe below) and you can put other stuff on it too, some nuts, greens, whatever you like.

The simpler the better. Just eat organic veggies and fruits. Don't cook them, don't mix them. Just wash and eat them. That's the simplest. You will feel great after a few days.
