Being vegetarian in that one doesn't eat meat/animal product is not a surefire guarantee that they are eating healthy at all. One can subsist on twinkies, chips, and all other kinds of junk and processed food that has no nutritional value.
As to holistic benefits, not sure what you are talking about. If one eats healthily there are supposed health benefits and many say that it does prevent disease.What are the holistic benefits of a vegetarian diet.?

The parts about the disadvantages in the diet are easily addressed with good nutrition and a full range of food intake- beans, legumes, seeds, nuts and yeast-like foods- marmite, miso, vegemite, beer all have B vitamins, and one doesn't need to eat animal based products to get that nutrient.What are the holistic benefits of a vegetarian diet.?

It is believed that high vegetable intakes are not the main agents responsible for reduced risk, rather it seems to be low meat intakes which offer protective affects. The exception to this would be high soluble fibre intake from plant foods which protect against colorectal cancers.

In terms of holistic health I don't know of any evidence, since it is not possible to produce scientific evidence of holistic benefits without such significant levels of uncertainty to render them unpublishable. Anyway there may be effects from eating healthy foods on self esteem, and for some this will be an influence of removing guilt from consuming corpses. Undertaking activities which are self nurturing can help fight depression etc by providing evidence against negativity ie it is hard to feel worthless if one acts is a way that indicates they care about themselves. However it would be possible to consume small amounts of some animal products without negatively influencing this depending on the individual's perception. So it is not reasonable to think that being vegetarian offers this kind of effect, rather it is the result of self care which may be associated with vegetarianism when done properly.
