A healthy vegetarian diet includes nutrient dense whole foods such as fruit, vegetables, especially leafy greens, whole grains, legumes, nuts and seeds. If you like milk, use almond, soy, coconut or hemp milk. Tofu and seitan are nice additions for extra protein in things like tacos, spagetti, stir fry. If you crumble tofu and add a little tumeric, it looks just like scrambled eggs and you can use it for fried rice, burritos or like breakfast. Nutritional yeast (Red Star) is nice as a seasoning and added to smoothies. Throw a half cup to a cup of greens in your smoothies to up your leafy greens.

Avoid refined carbs such as white flour products and sugar. Stick to whole foods as much as possible, only eat processed foods occasionally (as a last resort) or for convenience. Read labels. What is an example of a balanced vegetarian diet for a 15 year old male teenager?
