How do I maintain a healthy vegetarian diet when you are constantly busy and stressed?

I've been loosing time to make myself meals and now I just grab whatever is in the pantry. I need a healthier diet. I can't cook to save my life. I am a vegetarian full on. No fish or eggs. Help me? :)How do I maintain a healthy vegetarian diet when you are constantly busy and stressed?
Try to find a day where you have free time, and try to cook everything before. Put it in fridge. Then the next day take it out, heat it, and eat.
You can very easily maintain a healthy vegetarian diet and you can learn to cook because, while I am not stressed, I am constantly busy writing vegan and vegetarian recipes that are easy to understand and simple to follow. Please do not give up on yourself with such a negative dialog going on in your head. You may not enjoy cooking but you can do it. And by the way, learning to cook just may save your life. If the alternative is starvation then?

Take some cooking classes. Explore the web for awesome recipes. And do whatever you need to do to convince yourself that taking the time to nourish yourself well is as important, if not more important, than doing all those myriad things that you do to keep yourself so busy, so distracted, so stressed and so hungry. And if all else fails hire someone like me to be your personal chef. We aren't cheap but we do cook well. How do I maintain a healthy vegetarian diet when you are constantly busy and stressed?

You need to get into some vitamins to make sure that no matter what you eat your body is still getting nutrients. A simple women's multi vitamin is a good start or you could get a blood test at your doctors and find out exactly what levels are low in your blood.

I also find keeping healthy snacks like musli bars on hand are a great quick snack.
easy.. fresh fruits and veggies.

that's how i've been doing it for decades.

i'm very busy and active and stress is not my best bedfella but that's how it goes.

i've been raw most of the time.... real big time saver and energy boost.
Go raw then, you can grab some: trail mix, fruit, or veggies just as easy as you can grab junk food. When you do have spare time make a huge pot of beans and rice, veggie chili, etc.
Well the only thing I can tell is make time...because from what I can gather from what you wrote, stress will probably put you in the hospital before your diet would...
granola bars and fruits.
grab vegan snacks to eat in between errands.
Fresh fruit
look up vegan recipes and make some for now and freeze the rest
dont but loads of frozen meals....i gained weight! spend the weekend making soup and freezing it! it can be defrosted each evening and used for lunch....get a thermal flask but make sure to freeze it in portions. bring some raisins and some nuts and seed for extra proteina nd nutrients.....i love almonds and brazil nuts and sunflour seeds!

get wholemeal bread and fill it wilth salad or even if you have to go to a deli and get them to make a slad sandwhich but no white bread!

for breakfast make a healthy breakfast and some fruit! be sure to get up an extra bit earlier in the morning and eat a large breakfast because your metabolism will be better working in the morning! dont snack on crisps(popcorn if you must) and here in ireland i got a bean spread in the healthshop(its lovely)if you can get it put it on crackers!

eat everything brown and not white!

you could make a stir-fry but getting noodles(rice noodles are lovely) and mixing ll the veg together and the noodles and flavour it with turneric and soya sauce(low salt)

a dish which i have found to be easy and deliscious and literraly takes the same lengt of time as pasta to cook is spaghetti...

get some tvp mince and cook it in a wok. when it heats through mix in some dolmio pasta sauce. Chop up scallions, some carrots, yellow green or red peppers, brocolli, sweetcorn and soya beans or kidney beans etc(tinned will be quicker but drain away the liquid it is in!)and whatever veg you like and cook.(quantities depend on the amount of people eating) also cook brown spaghetti in a seperate sausecpan

be sure to take a suppliment of omega 3 6 and 9. i use the brand "vertese" its in the healthshop and another good multi-vitamin tablet!

in the evening you could make a smoothie...add whatevr fruit and even veg you like and add some ground seed or even some wheat germ. Yoghurt can be used to add some extra calcium(i use the alpro soya brand)

or even banan is a good thickener. its quick and nutricious!

if you are gonna buy frozen meals make them a treat at the weekend.....but the linda mcCartney sausages are lovely. (They are frozen)

also get a good cookbook which will tell you all the food that will give you the nutrients you need

i recomment "the complete vegan kitchen" by jannequin bennett

(dont forget to get a balanced diet (look up a vegan/vegetarian food pyramid cos our requirements differ fro that of a meat eaters!)

good luck x x
