Vegetarian Diet?

I want to give a vegetarian diet a trial run. Can anyone recommend some recipies for me? I want to be sure to get all the proper nutrients as well, and I'm not familiar with what to replace meat with to get the same.Vegetarian Diet?
Hi. You should write to www.peta.org and ask for their Vegetarian starter kit. They have some recipes in that starter kit. In order to learn about vegetarianism and how to get the right nutrient you should read some books. A good one is Becoming Vegetarian. If you can afford it, try to see a dietitian at firs for proper guidance. You an replace meat with Tofu, beans, lentils, lots of imitation meat products made by the company Yves, Tofurkey, veggie patties, burgers.... You an also buy protein shakes....

I am not a strict vegetarian myself, but have got past eating meat (white or other) daily. If cooked properly, nothing comes close to the taste of a veg dish.



Try the site below. A lot of good recipes. Remember, recipes are just one way to do things. You can always add your twist.



I think an excellent combination with vegs is Ricotta or Fetta cheese. Mix with spinach and you can use as filling in almost anything.

I don't know if you're going lacto-ovo (still eat dairy and eggs) or strict vegetarian/vegan (no animal products, so no eggs, dairy, honey, gelatin, etc.) but there are tons of great resources out there. For recipes, I love http://www.vegweb.com. All the recipes are vegan, it's a great database with tons of recipes, and comments let you see how a recipe should be modified to make it better, or if it's just awesome.



http://www.vegsoc.org/health/ has lots of information on nutrition for vegetarians. It's really not that different from nutrition as an omni. If you're vegan, you may want to take B-12 supplements, or make sure to drink soymilk or eat cereal fortified with B-12. Otherwise, just make sure to eat like the food pyramid suggests. Ignore the dairy requirement, you can get the nutrients elsewhere, and for protein, there's legumes, tofu, tempeh, seitan, and TVP. (And probably a few others I'm forgetting.)



I recommend using this experience to try new foods. Sure, you can eat omnisubs all day (like veggie burgers and seitan "steak" strips and such) but why? Lots of ethnic food is naturally vegan/vegetarian, and it's a great way to expand your food horizons. Try foods you've never had before! You may be surprised at what you've been missing.



I'm hesitant to recommend recipes, since I'm not sure what you're looking for, or what you like. Just keep in mind that a lot of foods you're already used to eating probably have vegetarian/vegan versions.



Also, I'm not sure why you're giving vegetarianism a trial run, but http://www.veganoutreach.org/whyvegan/ may convince you to make it more than just a trial. It also has some ideas for meals, and how to transition.

I have recently come across a good book by Dr Gillian Mckeith-'You are what you eat'., which i can highly recommend.

It also contains some superb vegetarian recipies.

eg. Gourmet Brown Rice Recipe

(serves 4)

1 Cup brown rice

2 Carrots, 1 Onion,1/2 cup fresh Peas

1 Veg stock cube, seasoning to taste.



Add 1 cup of rice to 2 cups of boiling water,add stock cube, small pieces of carrots and peas.Simmer for 20 minutes until the rice is tender and almost all water is absorbed.Take off the heat and let it sit for 5-10 mins before serving.

I improvise the recipe by adding ginger paste for taste....delicious....

You can use a product called "Meat-less" as a substitute for anything that calls for ground beef. It is actually a tofu based product that is great in tacos, sloppy joes, spaghetti, etc.
Make an investment.



Buy all of Sarah Kramer's vegan cook books. You can modify them to be lacto/ovo vegetarian. Her recipes are easy to read and easy to make.
