All different kinds of rice-and-beans dishes. If you have an Indian market near you, they usually have lots of different kinds of legumes. Cheese. Eggs. Tofu. Tempeh. All different kinds of fruits and veggies. Chocolate.
My favorite dishes: tofu in Thai coconut curry sauce. Curried chick peas. Lentil soup. Homemade pesto pizza (pesto sauce instead of tomato, mozzarella and/or ricotta, sliced black olives, onions, hot pepper flakes . . . mmmmmmm).

I'm assuming that you're going to be lacto-ovo vegetarian? So you don't eat any meat but do consume dairy and eggs.
I've been a lacto-ovo vegetarian for 2 years and really it's not that hard after a while. I recommend Boca veggie burgers and Morning star products to replace your meats (fake meat, they're amazing). Also give beans a try. I used to only eat refried beans but now I LOVE black beans. Kidney beans are really good too. Make sure you get 6-8 vegetables/fruits a day, and avoid eating too much dairy since that can cause you to gain weight (it's all carbs and fat).
I'm currently transitioning into being vegan and here are a few simple meals that I love:
-Spaghetti and tomato sauce
-Bagel with peanut butter (or cream cheese)
-Boca veggie burger with a vegetable and some type of nuts (almonds, cashews, ect)
-Vegetable stir fry
-Morning star chick'n nuggets with a vegetable and/or yogurt
Those were just a few that popped in my head. It truly is easy to change, you just need to give your grocery store a visit and you'll see how many meals you can easily make without meat:) Good luck!I'm starting my vegetarian diet tomorrow, what do you eat on a daily basis?
I usually eat Kix cereal with almond milk for breakfast. For lunch I eat Lightlife Smart Dogs that on put on the stove to "grill" and after I put cheddar cheese on top and put it in the microwave to melt the cheese then I put it in a hotdog bun and put Tapatio sauce (hot sauce). For dinner it varys. Sometimes I eat oatmeal too it's very yummy! ;)

well u have fruits, more veges than complete meals, cut short on rice. My personal favorites are milkshakes filling and delicious and many many bananas don't be silly they don't make u fat actually help in good and complete digestion..
I'm a pescatarian so I eat a lot a fish, cheese quesadillas, and Bush's vegetarian baked beans. :)

Shouldn't you have already thought this through?
I would suggest you try different types of breads and many fresh fruits are in season this time of year. I would suggest you start there.
I like salad, veggies, pasta, baked potatoes, and lots of other things...=D
