I'm also a vegetarian, So i take milk made foods in many times, and also the green vegetables.
Take Milk twice In the morning with taking breakfast and after dinner in the night going to bed. If u like try to add 1 tbsp ghee in d milk or almond paste or honey.
Try to take all the times green leaves at your lunch which is less fried. U can take paneer, butter items at your lunch, but in a limit. Take carrot, tomato what ever u like as salad, but u have to take daily %26amp; regularly these less things 2 gain your weight.
Always keep fresh butter and fresh whole milk curd in your refrigerator.
Breakfast: 125 Gms beaten rice, 250 Grams fresh whole milk curd, 50 Gms sugar or less as per your taste. Wash beaten rice in potable water, add curd and sugar, mix and eat.
Lunch: 4 chapatis applied with fresh butter or ghee, one bowl rice, dal added with 2 spoon pure ghee, and vegetables.
Evening: 4 Pcs of whole wheat bread, a large glass of lassi made after draining water from curd with 2 Tab. spoon of fresh butter.
Dinner: Like lunch. Take a large glass of whole milk with sugar, add horlicks/boost or any other taste enhancer and drink before sleeping.
Fruit after breakfast, Lunch %26amp; dinner: Golden banana, Mango, Grapes.
You can gain at least 2 Kg per month.

U havenot mentioned ur ht weigt etc. Don't know that why u r ready to gain weight.
But its easy to gain but hard to loose. THink once again. After u came to put on ur weight u have to work so har to loose to burn.
Firstly consult physician and askur needs try to follow his guidelines.
By taking oily foods, baked foods, etc its not ifficult to gian weight. but thing is u have to decide whether u r going on right way or not?
If weight gaining is must then plan for healthy growth if not it may leads to obesity.for thi su will face some other problems

But pls try to avoid weight gaining. If possible try to maintain. because obesity is the major problem today. upto my knowledge weight gaining is not have that much necessity fo rlife so think twice and plan well

all dairy products (not marked as low fat)
nuts %26amp; nut butters
oils
oreos (which are vegan)
some beans
french fries
pizzas
add butter and cheese to everything
finally ,
eat a lot for dinner , and sleep immediately . that way you can gaing weight faster .
You can have rice,it's rich in Carbohydrates....Potatoes,wheat,cashew nuts,dates....
